Crystallizers

The intermittent product obtained after chilling in the SSHEs is a mixture of solid and liquid phase. The desirable physical properties of the product are plasticity, consistency and structure. Plasticity is achieved only when there is fine dispersion of these solids held by internal cohesive forces in the entire mass.

The fine dispersion of solids in the product is effected by the use of Crystallizers (Pin Rotors). The Crystallizers manufactured at SIPEPL are jacketed horizontal cylinders with intermittently placed pins on the body and the gear driven rotor shafts alike.

The Crystallizer Skid designed at SIPEPL comprises of two working units engineered for a retention time of one and half minutes and three minutes respectively. The complete range of speciality foods products can be manufactured with a combination of these two working units and the SSHEs in different combinations. Furthermore, the VFD driven motors ensures that dispersion of the solids is consistent across products making the machine versatile.
